Venison Jerky

Jerky is a great option for a protein boost on the go, in the field, or at your desk. We love this traditional marinade, but feel free to experiment with ingredients or buy pre-made seasonings to fit your taste! Venison or goose breast can be used in this recipe.   

Serving size will vary.

Ingredients

  • 4 pounds flank or round venison steak (or goose breast), cut into thin 1/8” thick slices 
  • ½ cup lite soy sauce 
  • 4 tablespoons Worcestershire sauce 
  • 4 tablespoons light brown sugar 
  • 2 tablespoons liquid smoke 
  • 3 teaspoons salt 
  • 2 teaspoons coarse ground black pepper 
  • 2 teaspoons garlic powder 
  • 2 teaspoons onion powder 
  • 1.5 teaspoons paprika 

Directions 

  1. Whisk all ingredients thoroughly in a bowl.  
  2. Combine meat in marinade and pour into a Ziplock bag.  Marinate in the refrigerator for 8 hours or overnight. (Optional: Place dipped meat into food dehydrator vacuum sealing marinade container and run 1-2 cycles on marinating mode instead of overnight in Ziplock bag.) 
  3. Dehydrate on high at 160°F for 3.5 to 4 hours or until desired texture is reached.
